Don't you love a moist and lightly sweet slice of banana bread? I do, specially with a cup of tea while I blog. But some times that sweet treat will turn into a brick in my tummy, making me feel sluggish the rest of the day.
So I found some quinoa flour at the store, decided to give it a try and came up with a sinfully delicious loaf out of my oven. Mmmm! My husband and my kids love it too. The best thing is that it leavens wonderfully, has a mild quinoa flavor, which is high in protein with all the essential amino acids, and it doesn't spike sugar levels in the blood like other baking mixes do.
