Banana Bread

This wonderful treat has all the sinful deliciousness of the original, but without any negative side effects, unless you glutton on it like there's no tomorrow.

Makes: One loaf
Yield 8 servings
Prep time: 20 min
Cooking time: 1 hour
Ready in 1:20 hours.

Ingredients:

1/2 cup butter or coconut oil
3/4 cup turbinado sugar or coconut sugar
3 eggs
1 tsp vanilla extract
3 bananas
1/2 cup walnuts chopped
2 cups quinoa flour (Ancient Harvest brand)
1/4 cup tapioca flour
1 tsp baking powder
1 tsp cinnamon
1/8 tsp cardamom

Instructions:

Preheat the oven to 350ºF


In a bowl beat the butter and sugar until creamy. Add the eggs one at a time and the vanilla extract. Add the bananas and beat until there are no big chunks left, then add the walnuts.

In another bowl mix all the dry ingredients until blended. Add the dry ingredients to the batter in three stages and beat until just combined.

Put the batter into a 5 x 8 loaf pan and bake for 55 to 60 minutes or until a toothpick comes out clean.

Let it cool off before serving. Enjoy!
