Plantain Salad with Peanut Oil Dressing

This a refreshing way to use green plantains. The tangy, spicy dressing and sweet goji berries add extra dimensions to this exotic salad. Go ahead and wow your friends and family with this easy, healthy and delicious salad, they will keep coming back for more.

INGREDIENTS

(4 Servings)

Dressing
1/4 cup peanut oil
1 large lime juiced
2 tbsp tamari sauce
Red pepper flakes to taste (optional)

Salad
1 green plantain
2 tbsp peanut oil
4 cups spring mix salad mix
1 cup sprouts
1/4 cup goji berries
2 tbsp roasted sesame seeds

DIRECTIONS

In a glass jar mix all the ingredients for the dressing, fasten the lid tightly and shake until well mixed. If you make this dressing in advance, say in the morning or the day before, the red pepper flakes will have time to release their flavor into the mixture. Shake well right before serving.

Preheat the oven to 350ºF. Peel the plantain, and with a vegetable peeler cut thin strips of green plantain. Lay them in a single layer on a greased baking sheet, spritz with peanut oil (I use a mister bottle), and bake for 10 minutes. Remove from the oven and set apart.

In a large salad bowl or 4 individual salad bowls, lay a bed of mixed greens and the sprouts. Top with the crispy plantain strips, sprinkle the goji berries and the roasted sesame seeds. Drizzle with the dressing and enjoy!
