Baked Plantains with Cheese

My mom used to make this as a special treat for us.

INGREDIENTS

(8 servings)

4 very ripe plantains (blackened skins)
4 oz mozzarella cheese

DIRECTIONS

Preheat the oven to 350ºF. Lay the four plantains on a baking dish without removing the skins, and bake them in the middle rack for 30 minutes, or until their skins pop open, and they are very soft.

Pull them out of the oven and let them cool off enough so you can handle them. Remove the skins and cut a slit lengthwise, open it and lay equal amounts of mozzarella cheese inside each plantain. Return them to the oven and bake again until the cheese is melted and the plantains turn golden on top.

Cut them in half and serve them as a side dish for meats, or as a dessert.
